This is a simple mexican dish I prepare for a very casual dinner with friends.

Stacked Enchilada Pie

Active Work Time: 45 minutes

Total Preparation Time: 1 hour

Vegetarian

This recipe uses corn tortillas, evenly layered with cheese
and onion, and carefully piled into a wondrous stack. The
resulting pie actually benefits by being assembled the day
before needed so the flavors marry with one another. Mexican
crema is sold in the dairy case of well-stocked supermarkets
and Latino markets.

1/4 cup corn or canola oil, divided

10 stale corn tortillas

1 cup minced mild onion

3 cups Red Chile Sauce

1 cup pitted black olives, halved

3 cups grated medium-sharp Cheddar cheese

1/4 cup Mexican crema

1/2 cup crumbled queso fresco or queso cotija

1 cup crisped romaine leaves, cut into ribbons

2 teaspoons olive oil

Dash salt

2 teaspoons wine vinegar

1 avocado, peeled and sliced, for garnish

Heat the oil in a small skillet over medium-high heat and
fry the tortillas about 1 minute on each side. Drain on
paper towels.

Cook the onion over medium heat, using the same pan, just
long enough to remove the raw flavor, about 3 minutes.

Heat the oven to 350 degrees.

Begin your assembly of the enchilada stack by dipping a
fried tortilla, using tongs or your fingers, into the Red
Chile Sauce. Lay it in a 2 1/2-quart shallow casserole.
Spread a layer of 2 tablespoons of onion, 1/4 cup of grated
cheese and some olives. Keep dipping, stacking and layering
ingredients until you have used all of the tortillas. Try to
keep the layers even and then press the stack from the top
middle so everything adheres together. Pour any remaining
sauce around the base of the stack.

Bake the stack until the cheese has melted and started to
bubble, 15 minutes.

Just before serving, drizzle leftover heated Red Chile Sauce
(about 1/2 cup) over the sides of the pie and garnish with
abandon by drizzling crema over the top so it spills down
the sides. Sprinkle on the crumbled queso fresco.

Toss the romaine with the olive oil, salt and wine vinegar.
Arrange the romaine ribbons around the base of the stack
with a little on top. Garnish further with avocado slices.
Serve immediately by cutting the stack into 4 to 6 wedges.
Make sure that each wedge has enough of the crumbled cheese,
the romaine and avocado slices.

This makes excellent outdoor grilling on a summers afternoon
The tacos are mouth watering and the salsa recipe that I am including is a perfect compliment to the tacos. A frosty cold beer is another perfect accompaniment. Enjoy gang.

Tacos of Charcoal-Grilled Beef
(Tacos al Carbon)

2 pounds top round steak
2 cloves garlic
1/2 teaspoon sea salt
1/2 teaspoon ground cumin
1/2 teaspoon crushed dried
oregano, preferably Mexican
1/2 cup red wine
3 tablespoons safflower or
canola oil
Juice of 1 lemon or 2 limes
1/2 teaspoon freshly ground
black pepper
1/2 teaspoon sugar
Flour tortillas, warmed
2 cups salsa of choice for
garnish
2 cups guacamole for garnish
(optional)
1 white onion, finely chopped,
for garnish (optional)
1 cup chopped radishes, for
garnish (optional)
2 limes, quartered, for garnish
(optional)

Trim fat from meat, then pound
it slightly to tenderize it.
Chop garlic; mash with salt.
Combine garlic paste, cumin,
oregano, wine, oil, lemon or
lime juice, pepper and sugar in
glass or stainless-steel bowl.
Set aside 3 tablespoons of
marinade to use later. Add meat
to remaining marinade, turning
several times so it is
thoroughly coated. Cover and
refrigerate, turning
occasionally, for about 6 hours.
When almost ready to cook,
remove meat from marinade. Set
meat aside and discard marinade.
Bring meat to room temperature
if possible.

Light a charcoal fire and let it
burn until the coals are evenly
white and quite hot.

Grill meat until cooked as you
like it (al gusto), usually 2 to
3 minutes per side, depending on
the thickness of meat and heat
of the fire. Set steak on a
cutting board, brush on reserved
marinade, and let meat stand,
covered with aluminum foil, a
minute or so to reabsorb juices.

When ready to serve, cut meat
across the grain at slight angle
into thin slices and heap on
heated platter with a pile of
hot tortillas close by.

Let everyone fix their own tacos
by piling some of the meat on a
tortilla, adding salsa and other
garnishes, and wrapping it up
before eating.

Makes 8 hefty tacos.

Chunky Fresh Tomato Salsa

1 pound ripe tomatoes, cut in
1/4-inch pieces
1/3 cup finely chopped green
onions with some of the green
tops included
1/4 cup loosely packed chopped
cilantro
2 to 3 fresh jalapeno or serrano
peppers, finely chopped
1/4 teaspoon dried oregano,
preferably Mexican
Pinch of ground cumin
2 teaspoons lime juice (more can
be added to taste)


Toss tomatoes, onions and
cilantro together in glass bowl.
Add chiles, a little at a time,
until salsa has the right amount
of heat to taste. Add oregano,
cumin and lime juice. Sprinkle
with salt and toss again.
